Several years ago I was looking forward to a Ladies Brunch at the Church I was attending and wanted something new and unique to add to the table. I don’t even know how this one actually came about except that I was out of grits and usually bought Quaker but could only find Jim Dandy. That was a great purchase that has lived with me ever since. Just about everyone who has ever eaten it has just loved, however NOT my family who are really not grits eaters anyway, so I don’t let that get to me.
1 cup grits
4 cups water
1 8 oz. block of Pepper Jack cheese, grated
1 can Chunky Vegetable or Traditional Spaghetti Sauce – Del Monte (my choice)
Preheat oven to 350 and place all the above into a 13×9 dish that has been sprayed with cooking spray, stir and evenly distribute everything. Although I let this bake at least 1 hour, I do stir and make sure everything is even throughout at about 30 minutes in. After removing from oven, I let stand about 10 minutes before serving. It pairs well with a bread, sausage, cheese, egg Breakfast Casserole for a brunch, then some fresh fruit and juice, coffee, tea, etc.
