Sunday Lunch right from the Lord’s Bounty

So many friends have blessed us with some of their harvest this year as we didn’t prepare and plant a garden.   We’ll have to fix that next year.

 Lady Peas and Zipper Peas, Yellow Squash Casserole, Green Beans and a Pork Loin I found at a super great price.  I searched for a good Squash Casserole recipe but really couldn’t find what I wanted to so I created my own recipe and it was simply scrumptious!

Yellow Squash Casserole

Spray 13×9 casserole dish layer sliced Yellow Squash, Italian bread crumbs, cut up onion, with pepper and a very minimal amount salt (Sea Salt is my choice) due to the Italian bread crumbs being seasoned, until you’re right at the top of the dish.  I used about 4 good sized squash.  Bake at 400 for at least 35-40 minutes.  This was great.
