Allspice = 3 parts: Cinnamon, Nutmeg and Cloves so if you need a tsp. of Allspice just use 1/3 tsp. of each spice listed
Sour Milk or Buttermilk: If all you have is regular milk and you need one of these just add 1 T vinegar, either white or apple cider will be fine, stir and let stand for 5-10 minutes befure pouring into your batter.
If a recipe calls for shortening often the same amount of oil can be substituted. Also, oil can be replaced with applesauce and for a more spice cake flavor you could use applebutter for an unexpected taste.
