Homemade Chunky Chicken Salad



2 chopped boiled eggs

1 large chopped Kosher Dill pickle

5 finely chopped stalks of celery

4 baked Chicken leg quarters, seasoned well

(for seasoning on Chicken I used Mrs. Dash, Lemon Pepper, Pepper, Sea Salt, Tony Chachere’s, Italian Seasonings to taste on each side with skin on to have chicken broth for another dish at some time in the future)

1T mustard (healthy spoonful)

1/2 c. Kraft Mayo

S&P, Mrs. Dash, Tony’s to taste

Chop everything up according to directions in ingredient list.  Mix well.  Spoon onto bread of choice, spread, add lettuce, eat and enjoy!
