Roasted Cauliflower…plus


Yesterday I hosted my Premier Designs Jewelry party for this month and put together a Crockpot full of Taco Soup!  This Taco Soup is the plus, I’ll tell you about the cauliflower soon.  Our Taco Soup, Chili, etc. has no beans nor does it have either whole kernel or creamed corn due to allergies.  I really love corn so this time I got ‘baby corn’… Also I prefer to use Turkey sausage, none available so I got Italian Sausage (ground) and ground Turkey, which turned out well.


1 lb. ground Italian sausage

1 lb. ground Turkey

2 pkg. Taco seasoning mix

2 cans Rotel tomatoes

1 lg. yellow onion, chopped

1 lg. green bell pepper, chopped

3 celery sticks sliced

2 cans baby corn

1 can cut green beans

4 potatoes cubed, bite size


Brown meat, onion, pepper, celery.  Add Taco seasoning while continuing to brown a few more minutes mixing around well.  I used my browning slow cooker where I can brown things in my pot on the stove then move to crockpot base.  Once seasoning was mixed to my liking I added the tomatoes and 2 cans of water.  Place in crockpot base.  Turn on lo and cook about 8 hours.  I added rest of ingredients except potatoes.  I like to drain canned veggies and added enough water to leave about an inch or so at top of pot.  When cooking time was complete I added the potatoes and cooked on hi for 2 more hours.  I stirred from time to time.  Turned out well.  Everyone enjoyed it as did hubby.


Cauliflower is just one of the fresh items we found at a roadside stand and I was so excited.  I decided to roast in the oven instead of on grill.  Great tasting.


1 lg. head of Cauliflower cut into natural florets, both lg. & small

1 lg. yellow onion cut in about 16 wedges & separated

1 T minced garlic

Several blades fresh chives scissor cut small

EVOO, liberal amount

Mrs. Dash, No Salt & black pepper, to taste

Mix all well being sure to coat everything well. 

Roast about 40 minutes in an oven preheated to 400, turning about 20 minutes in. 


Great source of enjoyment for Sunday lunch! 

Oh yeah, I like a little soup with my crackers!  And I cut the baby corn up today.  It was challenging to eat whole which we discovered yesterday.
