Can this Paleo Diet be this good and this good for you and the same time?

Here’s proof! Tell me!

I say a resounding YES!

This is probably one of the easiest and most tasty I’ve done.

Crockpot Chicken Vegetable Soup

3 skinless chicken leg quarters

1/2 lb. baby carrots

4 stalks of celery, cut to your preference

1 yellow onion, julienned

Water, just to cover

No Salt, Pepper, Mrs. Dash to taste just sprinkled over top, layered according to order I listed.

I let it cook about 3 hours on high, then added 2 cups of hot water with 2 bouillon cubes dissolved, poured in at the side, then let it cook about another hour on low.

I let it cool enough then to dish up in a souffle casserole dish and refrigerate overnight.  Had this for lunch….the next day.  Excellent.  My husband made a pot of rice on the side to have with his.  I love it just the way it is.  It’s breakfast time right now as I type this.  May have that instead of eggs. Hmm. Well, maybe I’ll have it for lunch after Church!

(Oh, I know it’s not tomorrow but I had that post in my Drafts a couple days and didn’t realize it.)

Bless us O Lord, in these, Thy gifts, which we are about to receive.  In Thy Bounty, through Christ our Lord, Amen! (a table blessing we often said during my childhood)

Paleo Lifestyle still ROCKS!

I baked skinless chicken leg quarters with Lemon Pepper, No Salt & pepper; Hubby grilled skinless chicken leg quarters adding BBQ sauce; I have chicken leg quarters in bottom of crockpot with veggies & broth making soup for later.  We did have some cut green beans with our chicken.  I had the baked, he had the BBQ grilled.  Soup, yep, still on!

And today I was able to, along with my sweetheart, begin by guiding our 18 year old in some Adulting moments!  We know it can be challenging but has to be done.  1st step in building his own credit, signing his life away including getting his own Insurance Policy…Tag within 5 business days….Thankful he has a good job….almost through with High School.  Looking forward with great responsibility.

 

Political Luncheon Event Today.

You really can eat out, have what you like customized to your taste, and not stand out!  I have always loved cheese, sauces, chips, bread, etc. dairy, let’s not forget lots of dairy products.  I am however, enjoying Paleo so far (Cavewoman) Rah!

Sun Shines on my Special Paleo Breakfast

I’ve been showing a sampling of my lunches, suppers, but no breakfast to date.  I know, this is a new leg of my Life’s Journey, but here goes!

I use a Salad plate size most of the time.  I can fill it up and not take refills and I’m eating about 2/3 of a dinner size plate.

We’re so very blessed to have available to us, via a close friend, fresh brown eggs from her sister’s chickens.  Oh, I love, love, love eggs and these are awesome.  Now, on to my breakfast display…

2 fresh, brown eggs mixed with a splash, splash & 1/2 water

1 Buttom Mushroom cut up to your desired size, i.e. sliced, chopped, etc.

No Salt, Pepper, Mrs. Dash to taste

I love fried eggs best, with white not quite done, and yolk very runny.  Yes, I know, so many detest that.  Take after my Daddy in that.  In respect to scrambled eggs I’ve always used milk unless there’s none in the house.  Learned during childhood milk is to be used, but only in the past few saw water used.  Now, since I’m working hard at following the dos and don’t soft Paleo, no dairy, so water it is.  Tasty!  Very much so!

As you can see in the Sunny plate below, I added a piece of bacon halved, along with a couple spoons of cut up Honeydew & Canteloupe melons.

As far as coffee my choice most often is black.  Today hubby made a pot of Mocha Mint.  #treatsmespecial24/7

Paleo Lifestyle Eating is Fun (so far)

Here’s a Facebook Link to a lady who I receive daily emails from that includes lots of great info, recipes, etc.  

And my 2nd day of Paleo foods is so good.  

Lunch was Steak Fajita Salad at a local New Mexican food restaurant, Mi Sol Azteca

  
Then Supper was using some:

Chicken Tenderloins

EVOO

1/2 an onion

1/2 green bell pepper

4 large button mushrooms cut in 1/2 and then quartered

Seasoned with Mrs. Dash, No Salt & Pepper

I cooked the above ingredients on the stovetop as I would a stir fry.  

I have an awesome small electric Rice Cooker, perfect results everytime.  I love Yellow Rice (Saffron) and tonight I prepared it to accompany the rest of the our delectable meal.  For me, a couple florets each of broccoli & cauliflower, but green beans for hubby. 

Very good, enjoying my Paleo Journey so far.

  

And then as a dessert I had some Greek Yogurt, Plain & Strawberry with fresh blueberries & strawberries.  Very good.

My sweet hubby picked up some fresh choices for me on his way home.  IMHO he did very well!   He’s been really tasting for a fresh salad so after I got it ready for him I began my meal.  Broccoli & Cauliflower are not his forte but they are mine!  My original idea was to have a salad with grilled chicken.  As you can see, I made a bit of a left turn!  I do that a lot!

My salad part is a bed of fresh Spinach.  

Grilled in EVOO:

2 Chicken Tenderloins

2 sliced green onions

4-6 button mushrooms sliced

Florets from 1 stalk of Broccoli

Florets from 3 stems of Cauliflower

Mrs. Dash, No Salt & Pepper to taste    (A couple years ago Dr. prescribed less sodium and suggested No Salt which truly took a bit of time adjusting to the taste.  No sodium.) 

Once above was cooked to my taste, I placed on Spinach.  Wonderful meal and seasoned perfectly.

So, how’s this for a first meal…love to have some feedback!

 

My life is about to change…

Paleo diet has been introduced to me…I am really loving what I’ve found and read.  In the next days I’ll be posting things I’m learning.  Of course, I will show some recipes I find and will definitely make some of my own.  You’ll enjoy!  Now doubt .

Please can someone tell me where Freshly Pressed has run off to?

I can’t seem to find the freshly pressed articles anymore or is it no longer part of WP platform?

I know it was re-baptized sometime ago but where is it?

Is something wrong with my blog?

I think there might be a worm chewing up my stuff ‘cos,

– I have lost my Re-Blog button somewhere. Could you check to see if it came over to visit at your end and is still stuck there?

HELP ASAP. If you know how I can find my re-blog button and Freshly Pressed, do share your advise.
